Enchilada Casserole
This is another healthy and tasty recipe from Cooking Light. Their recipes rarely disappoint although I adjusted the seasoning considerably this time.

Rotini with Sauteed Chicken Sausage and Vegetables
This was one meal that I had not intended to post on my blog, but as I was cooking it and I saw how beautiful and colorful it was I couldn't help but taking pictures and sharing it with you all.

Coconut Banana Bread with Lime Glaze
Wow! This is a delicious banana bread! It is so moist and the coconut gives it such nice texture. The glaze just puts it over the top.

Easy Grilled pork tenderloin with Balsamic-Honey Glaze
I was so excited about the Massaged kale salad (recipe here) that I kind of forgot to take pictures of the grilled pork tenderloin. But here is the simple recipe:
Massaged Kale salad with Mango
I bet you this post title made you curious! Massaged kale? really? At least that was my reaction when I heard about it.

Peach Lemonade
It has been a hot, humid and dry summer here in Saint Paul. We are doing our best to stay cool with trips to the pool, the air conditioning blasting, and of course sipping cool and delicious drinks.
Rosemary Lemonade
This summer I have experimented with making my own lemonade. It is super easy, as long as you are willing to squeeze a lot of lemons. But the loveliness you are rewarded with makes it sooo worth it!

Parmesan-Roasted Broccoli a la Ina Garten
Sundays are often "clean out the refrigerator day" at our house. There are usually a few Tupperware containers of leftovers and with my weekly CSA there are veggies that need to be used up sooner rather than later.

Rigatoni with Tomato Sauce and Ricotta
Getting a delicious meal on the table couldn't be easier than with this Rigatoni dish. Or maybe it could, but this is pretty darn quick and easy!

Salmon and Roasted Tomatoes over Couscous
Ok, so this is only the third fish recipe on my blog. Obviously I don't cook a lot of fish, but when I made this dish recently I asked myself why?

Salad with Raspberries and Cucumbers
This time of year we eat a lot of salads around here. And since we started receiving our weekly CSA, even more so. There are always a lot of salad greens in the box along with new and unfamiliar veggies. This is our first year taking part of a CSA (community-supported Agriculture, see note) and I can already tell that it is making us eat a lot more veggies than we normally do. And to know that it is so fresh and organically grown is very satisfying.

Lemon Yogurt Mousse with Blueberry Sauce
This is a delightful little dessert that I made over the Memorial day week end. It was really airy and light and the combination of slightly tart lemon and sweet blueberry sauce is a match made in heaven. My family really enjoyed the presentation in the individual ramekins and loved, loved the dessert. There were a lot of mmm's and yum's around the table.

Broiled sesame salmon with carrots and leeks
My oldest daughter has asked me many times to make salmon for dinner and I finally did. This is only the second fish recipe I have posted which shows that cooking and eating fish isn't something I naturally gravitate to. It is not that I don't like fish. I will often order fish at a nice restaurant, but preparing and cooking it at home is still rare.

Blueberry White Chocolate Scones
One of my most favorite things to treat myself to with my afternoon tea or coffee is a delicious scone. I frequently buy one at one of my local bakeries, but none of them offer this combination of blueberries and white chocolate.

Beef and Potato Stew
Today was a chilly day with snowflakes swirling in the air. The temperature took a nose dive from this week end's balmy mid 70s to barely reaching 40 today. There seems to be no end to the weirdness of the weather this season. Well, it was a perfect day for meat and potatoes!

Ham and Parsley Risotto
If you are looking for ways to use up any of that leftover Easter ham I urge you to try this recipe. This Ham and Parsley Risotto is really easy to make although as with any risotto it is somewhat of a high maintenance dish to make, due to the constant stirring and adding of liquid.

Indian Chicken curry Soup with carrots, apple, ginger and Chili
Even though I have found little time for my blogging this year this recipe is just too good to not be shared with all of my friends. It comes from my favorite Norwegian food blogger Trine at www.trinesmatblogg.no She has reached somewhat of a celebrity status in the Norwegian cooking world, and for good reason.

Slow-cooker beef and tomato stew
I came upon this recipe in Everyday Food, a small recipe booklet from the kitchens of Martha Stewart. I love this little magazine. It is always chuck-full of delicious recipes and ideas. I have made many of them and Martha never disappoints. I was so happy to see a slow-cooker recipe in the latest issue and it was the first meal I made in my new slow-cooker.

Slow-cooker Barbecue Pulled Pork Sandwiches
This week I want to share some really good slow-cooker recipes. This is a new cooking method for me since I just recently purchased one.Slow-cookers (or Crock pots as they are commonly called) have been around for decades and many of my friends tell me they own one but never use it. Well, lately it seems the slow-cooker is experiencing somewhat of a revival. There are many new beautiful slow-cooker cookbooks out there and every major food magazine have run features on slow-cooking and offer many wonderful recipes.

Butternut Squash and Ham Soup
This is a great winter soup that I am confident your whole family will enjoy. My 10-year old daughter asked me if "I could make that really good soup with squash and ham", and I said "most definitely!" I love this soup, I just forgot about it for a while.
