Rosemary Lemonade



This summer I have experimented with making my own lemonade. It is super easy, as long as you are willing to squeeze a lot of lemons. But the loveliness you are rewarded with makes it sooo worth it!
This is not your typical frozen- squeezed- out- of- a -can -and- mixed -with -not-so cold water, kind of lemonade that my kids usually make. This is sophisticated! I can totally envision the Duchess of Cambridge (that's Kate) sipping this stuff. I have made this lemonade several times this summer and I just love it! It is so refreshing and the rosemary just blends perfectly with the tartness of the lemons. A very unique and delicious, and perhaps more grown-up, maybe even Royal, version of lemonade. Enjoy!



Ingredients:
7 cups cold water, divided
1 1/4 cup sugar
1 cup fresh rosemary leaves, plus some stems for garnish
1 1/2 cups fresh squeezed lemon juice (about 10 small lemons)
Lemon slices and ice for serving


In a small saucepan, mix 3 cups water and sugar, bring to a boil. Reduce heat and simmer until sugar is completely dissolved. Add the rosemary leaves; remove the mixture from the heat. Cool completely (at least 1 hour).



Strain into a pitcher, and add 4 cups of ice cold water and lemon juice. Stir well. Serve over ice with a sprig of rosemary and a lemon slice.




Serves 6-8 (depending on your glass slice)
