Strawberry Rhubarb Lemonade


Nothing is more satisfying than a glass of cool tart lemonade on a hot summer day!
I enjoy making my own lemonade from scratch, flavored with different fruits and herbs.The combination of sweet strawberries and tart rhubarb is a match made in heaven. Just incredibly refreshing! Take a look at other lemonade recipes here and here. 

Ingredients:

5 cups water
1 pint strawberries (about 2 cups), hulled and halved
2 cups chopped rhubarb
1 cup sugar
1 teaspoon lemon zest
1- 1 1/2 cups freshly squeezed lemon juice (about 6 large lemons)
Ice for serving
Lemon slices and mint for garnish (optional)

Preparation:
Combine first 5 ingredients in a large saucepan. Heat over medium heat until boiling. Let mixture simmer until fruit is tender, about 10 minutes. Remove from heat and cool slightly.


Over a large bowl, strain fruit mixture through a fine mesh sieve, pressing on solids with a spoon to get as much juice as possible. Transfer liquid to a pitcher or glass bottle and cool completely in refrigerator.


You now have a delicious strawberry rhubarb syrup that can be used on its own or you can proceeds to making lemonade. Squeeze lemons into a bowl or measuring cup and add to chilled fruit syrup. Stir to blend. Serve in ice filled glasses, adding lemon slices and a sprig of mint as garnish. Enjoy!



Serves 8-10 depending on glass size
