This easy broccoli salad has been my go to side dish this summer.
It is so fresh and delicious and healthy, I think (a little mayo doesn't hurt anyone, right?)! It is the perfect addition to anything meaty you are grilling this summer. I prefer using sliced or chopped almonds (slightly toasted is ideal), but sunflower seeds or walnuts work as well. You can even add chopped apple for even more crunch. Any leftovers keep well for several days in the fridge. Yum!
Salad:
I bunch broccoli, chopped
1/2 small red onion, diced
1/4 cup lightly toasted sliced almonds
1/4 cup dried cranberries
Dressing:
1 cup sour cream
1/4 cup mayo
1/2 teaspoon dijon mustard
1 tablespoon rice vinegar
1 tablespoon honey
Salt and pepper, to taste
Preparation:
Wash and chop broccoli and add to a large mixing bowl. Add remaining ingredients and stir together. In a small bowl, stir together the sour cream, mayo, mustard, vinegar and honey. Season with salt and pepper. Pour dressing over broccoli and fold to cover completely. Chill until ready to serve.

kindly asking, how big a 'bunch' of broccoli? cup qty or weight?
ReplyDeleteSince my scale is broken at the moment I have to guess 1 lb, about 4 cups. The packaging (from Target) says 1 bunch! The top part is the size of a medium cauliflower. Thanks for visiting!
