I just love this combination of flavors so much. Keeping these two ingredients constant, you can customize the sandwich as much a you like with whatever happens to be in your fridge, as far as meat and cheese goes (roast beef is especially good!). I have also made it with spinach and avocado. It is all delicious! I usually don't put any condiments or sauce on it but some mayo is pretty good. With a nice salad on the side this makes enough for two people, but I gobbled up both of these myself! Here is what you need:
I piece Naan, cut in half
Deli meat, as much as you want. I used 2 slices turkey.
1/2 cup thinly sliced onion
1 slice jarred roasted red pepper, cut into strips
2 slices deli sliced Provolone (or more)
Mayo and/or Dijon mustard, optional
Start by cooking the sliced onions with about 1 tablespoon butter in a medium saute pan, over medium-low heat, stirring occasionally, about 10 minutes, until soft and slightly browned. Set aside.
Heat a grill pan over high heat.
Build your sandwich: Cover one flat side (bubble side down) of Naan with mayo if using. Top with meat and remaining ingredients ending with cheese. Top with second half of Naan and press together. Place in hot grill pan and cook about 2-3 minutes on each side. Place a heavy pot or something on top to press the sandwich down a little to create nice grill marks. Serve immediately.
