Graham Cracker Cream Cheese Fruit Squares

This dessert has all the components of a fancy fruit tart, but none of the work.
These graham cracker fruit tarts are gorgeous and delicious and so easy to make. There is no baking involved at all. My kids and husband went gaga over these (as did I!). In fact they can probably whip these up all on their own.

Ingredients (For about 10 squares)
5 Graham cracker sheets, halved into squares
1/2 log Cream cheese, softened
2-3 tablespoons powdered sugar, plus more for the top
1/4 teaspoon vanilla extract
Assorted fruits and berries, chopped
(I used Kiwi, blueberries, strawberries and blackberries)
Mint leaves would make them look even more fabulous!

Whip cream cheese with powdered sugar and vanilla. Spread on Graham cracker squares. Top with fruit and dust with powdered sugar. Easy peasy! But frightfully delicious.

Serves 5 (with leftover cream for another batch)

I found inspiration for these on Pam's blog
