Buttery Onion Parsley Potatoes


These potatoes are fabulous with just about anything you choose to put on the grill this summer.
We had the in-laws over for a casual barbecue last week end and I served these with turkey burgers. The potatoes were a huge hit with everyone. It never hurts to score points with the in-laws right? My kids loved these too and the next day they fought over the few scraps left over. Oh, the joy!

You will need:
I bag (approximately 2 lbs) red potatoes
1/2 cup (1 stick) butter, divided
1 small red onion, sliced
2 tablespoons minced garlic
Salt and pepper, to taste
2 tablespoons fresh parsley, plus more for garnish

Boil the potatoes in lightly salted water until just tender. Mine took about 15 minutes. While potatoes are boiling, slice the onion and saute with 1/4 cup of the butter and the garlic until tender.
Melt the remaining 1/4 cup butter in a large baking dish and add the potatoes. Season with salt and pepper and parsley. Toss around a few times. Add the cooked onion mixture to the potatoes and broil on high for 8-10 minutes, or until the potatoes start to brown. Sprinkle a little more parsley on top of the potatoes for garnish and serve immediately.





Serves 8 well
