Sheet Pan Sumac Chicken With Cauliflower And Carrots


Here is an all in one sheet pan meal that really hits the spot on a cold winters night.
This recipe introduced me to sumac which I have never used before. I have seen it in several recipes lately so maybe it is becoming more popular. None of my regular grocery stores carry it so I made a trip to Penzey's spices. I just love that place! I could easily spend a fortune in there. Anyhow, the sumac spiced oil poured over the vegetables and chicken was delicious. It has a bright somewhat  lemony flavor. My kids loved the chicken! I should have made more. The vegetables were perfectly caramelized and yummy and the added herb oil scattered over the top at the end took it over the top. Sometimes those little extra details make all the difference. And with everything in a foil lined sheet pan clean up is a breeze to. This is a definite winner!

Ingredients:
6 tablespoons olive oil, divided
1 tablespoon sumac
11/4 teaspoon salt, divided
1 teaspoon light brown sugar
1 teaspoon paprika
1/4 teaspoon red pepper
1 pound cauliflower florets (1 small head)
3 large carrots cut into 2-3-inch sticks
1 pound chicken thighs, skinned, with or without bones
1 pound skinless drumsticks
1 small lemon, thinly sliced
1 small red onion, cut into wedges
For herb topping:
1/2 cup chopped fresh parsley
1/2 cup chopped fresh cilantro
1 tablespoon fresh lemon juice
1 garlic clove, finely chopped
Olive oil

Preparation:
Preheat oven to 425 F.
Cover a sheet pan with aluminum foil, set aside.
In a small bowl, combine 3 tablespoons oil with next 5 ingredients.Place cauliflower and carrots on the prepared baking sheet and drizzle with half of oil mixture; toss to coat. Add chicken pieces and brush with remaining oil mix. Scatter the lemon slices around veggies and chicken. Bake for 20 minutes. Remove from oven and stir the vegetables. Add onion wedges and bake for another 20 minutes. Meanwhile, combine the remaining 3 tablespoons olive oil, parsley and remaining ingredients in a small bowl. Spoon over chicken and vegetables at serving time.
