Brownie Bites


I was craving something chocolaty today and decided to make a little treat, literally.
Sometimes all I need is just a bite or two to feel satisfied, so brownie bites are perfect! This recipe is really simple and quick to put together and since the brownies are so small baking time is short too. So in about 20 minutes of total time you can enjoy these cuties. You could definitely elaborate on the presentation of these, adding glaze or frosting. My favorite was the addition of a few sea salt flakes.

Ingredients:
1/2 cup all-purpose flour
1 scant teaspoon baking powder
Pinch of salt
1/2 cup sugar
3 tablespoons unsweetened cocoa
4 large egg whites
2 tablespoons coconut oil
1 teaspoon vanilla extract
1 tablespoon chocolate liqueur (optional)
1/4 cup cocoa nibs (optional)
1/4 cup semi -sweet chocolate chips

Optional toppings:
Roasted salted almonds
Sea salt
Powdered sugar

Preparation:
Preheat oven to 400 degrees F.
Lightly spoon flour into a measuring cup, level with a knife. Combine flour, sugar, and cocoa in a medium bowl, stirring with a whisk
Whisk egg whites until foamy in a separate bowl. Add oil, vanilla and liquer, if using. Stir with a whisk. Add egg white mixture to flour mixture, stirring until just moistened. Fold in chocolate chips and cocoa nibs. Spoon batter evenly into 24 miniature muffin cups. I recommend using mini muffin cups and spraying these lightly with coconut oil. Sprinkle tops with nuts or salt, if desired.
Bake at 400 F for 8 minutes. Remove from pan and cool on a rack. I using paper cups, let brownies cool well before peeling off. Sprinkle with powdered sugar, if desired. Enjoy!




Makes 24 brownie bites.
