Grilled Chicken Pita Sandwich With Tomato Salad And Spicy Yogurt Sauce


I look at the local newspaper from my hometown Bergen, Norway almost daily.
Today I stumbled across a feature on a young chef , giving tips on grilling chicken. He shared a few recipes, including this one for a grilled pita bread chicken sandwich. I was immediately sold on this idea. I have thought about making pita bread for a while and decided to go for it! It turned out great and I posted the pita recipe here.The chicken was deliciously flavorful and with the simple tomato salad and the yogurt sauce this is a fresh and healthy summer meal. I would take this over a greasy burger any time! I have a feeling it will not be long until I make this again. 

Ingredients:
Chicken:
4 boneless chicken breasts
Taco spice:
 3 tablespoons paprika
 1 teaspoon salt
 1 teaspoon cumin
 1 teaspoon (or more) cayenne
 1 teaspoon garlic powder

Tomato salad:
1/2 pound cherry tomatoes, quartered
1/2 small red onion, diced
Chopped fresh cilantro, to taste (I like a lot!)
1 tablespoon vinegar
Coarse salt such as Maldon , to taste

Yogurt sauce:
1 small container plain Greek yogurt
Juice of 1/2 lime
Sriracha, to taste

Grilled pita breads (Recipe here)
Arugula

Preparation:
Stir all the spices together in a small bowl. Sprinkle generously over both sides of the chicken breasts. Set aside while you prepare the tomato salad: Stir tomatoes, onions and Cilantro together in a medium bowl. Sprinkle with vinegar and salt. Set aside or refrigerate.


In a small bowl stir together yogurt, lime juice and Sriracha until combined. I only used about a teaspoon of Sriracha but make it as hot as you like! Refrigerate.

Grill chicken over hot coals about 5 minutes per side, depending on the size. When you see clear juice coming out of  the chicken it is done. Remove from grill and let it rest for about 10 minutes.This is important. Do not skip this step! During this time you can grill the pitas.After 10 minutes, cut chicken into strips for serving.

Here is how you put it all together: Cut pitas in half. Top bottom half with some arugula, pile on some sliced chicken, tomato salad and a dollop of yogurt sauce. Press the top of the pita gently onto the sandwich. Enjoy!


As an extra side  I put a few parboiled potatoes on skewers and grilled them for a few minutes.
