Dutch Apple Oven Pancake


This morning I made this beautiful oven pancake. Nice and puffy filled with sweet apples.
The delicious smells from the oven as it cooked was enough to wake up everyone in the house in time for Saturday breakfast. I didn't have to call on anyone!  Easy to make, easy to serve and very easy to eat! This could be served as dessert as well with some ice cream on the side. Yum! Recipe adapted and translated from matpaabordet.

Ingredients:
1-2 apples, sliced thin
1 1/2 tablespoons butter
1 tablespoon honey
120 grams all-purpose flour
1 tablespoon sugar
1/2 teaspoon cinnamon
pinch of salt
5 eggs
2 1/4 cups low fat milk
1/2 teaspoon vanilla extract
Powdered sugar, for dusting
1/4 cup sliced or slivered almonds, toasted (optional) 


Preparation:
Preheat oven to 425 degrees F. Melt butter and honey in an oven proof skillet. Add apple slices and saute until soft and slightly golden, 3-4 minutes. Meanwhile, sift flour, sugar, cinnamon and salt together in a  small bowl. In a medium bowl, whisk together eggs, milk and vanilla. Add flour mix to the egg mix and stir until just combined. You could make the batter the night before and refrigerate over night. Let it sit at room temperature about 20 minutes before using.
Pour the batter over the apples in the hot skillet. Transfer skillet to the oven and bake 20-25 minutes until puffy, and edges are browned and top is dry. Remove from oven and dust with powdered sugar and sprinkle with toasted almonds.
